These are generally made of metal.

A cheap charcoal garden grill?

You have probably seen cheap charcoal grills sold in large stores. In our experience, after just one or two uses they start to become loose and the screws have to be tightened before every use. What is more, they can usually grill for only 3-4 people at a time, making them unsuitable for larger groups.

More expensive charcoal grills

Large stores also sell much bigger, more expensive grills. These generally perform better. With garden grilling, however, you still need to place a separate table next to them.

A common problem is that the grill operator, the “host”, becomes isolated from the rest of the group, even if the table can be placed close to the grill.

Without a table, you end up running back and forth between the kitchen and the garden carrying food.

This can make a shared garden activity surprisingly tiring.

Electric garden grill

An electric grill is a good alternative for one or two people, but it is not really suitable for larger family gatherings or parties.

It is convenient because you only need to switch it on, but it cannot provide the unforgettable flavor of food cooked over a charcoal grill.

Gas grill

There are gas grills available that are suitable even for larger gatherings.

Some people, however, are understandably reluctant to use a gas cylinder outdoors in the blazing summer sun: gas cylinders do present an explosion hazard.

A bigger issue is that higher-quality gas grills are very expensive.

With a gas grill, you also miss the unforgettable flavor and smoky aroma that a charcoal grill provides.

Built-in bacon roaster

At first glance, a built-in bacon roaster may seem like a good grill alternative.

However, it also raises a number of practical questions and problems.

Paleo bacon roasting: a circle of stones on the ground

Presumably, even prehistoric people arranged a few stones in a circle on the ground and built a fire inside it to roast mammoth meat.

For prehistoric people this may have represented the height of comfort, but today most of us are not used to squatting for long periods, and even sitting very low can be uncomfortable. If we use a comfortable chair instead, constantly leaning forward soon puts a strain on the lower back.

The post-socialist-era solution: the concrete bacon roaster

Brick- or concrete-built bacon roasters became particularly fashionable in the 1980s.

They are easier to light and more convenient to use.

Building one, however, is not always straightforward.

A more substantial reinforced concrete bacon roaster can weigh several hundred kilograms. It therefore requires a serious concrete foundation in the garden.

A concrete bacon roaster is also often simply unattractive. A large grey cube or cylinder in the middle of a garden is rarely the height of aesthetics.

If it is decorated with stone, the cost can rise significantly, and care must usually be taken to prevent the entire cladding from being damaged by frost during winter.

What fuel should you use?

Grills can be fired with wood or charcoal. It is important to store wood in a dry, well-ventilated place. Using damp wood that smolders for a long time can spoil both your garden gathering and the flavor of the food. Acidic tar seeping from wet wood can attack and damage iron components.

We know from, among other sources, Oszkár Bárczay’s 1893 study of old Hungarian cuisine that the Hungarians, like “other peoples leading a nomadic way of life,” subsisted mainly on meat and dairy products; meat obtained through hunting, fishing and animal husbandry was most often roasted over coals or prepared in a cauldron by roasting, braising or boiling.
